How do you make the corned beef, Jim? I've always wondered, but never pursued the answer.

Take a chunk of brisket and trim the fat off and square it up until you got about 4, 4.5 pounds.


Put it in a big tub that has a gallon of water, salt, brown sugar, garlic and a bunch of pickling spice.

Add your Prague powder no.1 and mix it all up.

Let meat rest in the cure for about a week then boil her up!
 
Shepherds pie's kind of a weird thing. Not sure I could trust a shepherd that made pies from his charges :^D
 
Had some left over BBQ pork loin and hamburgers that just cried out to become chili with black beans. Still had some serrano peppers in the garden to help it along. Got home early, cooked it up and did a sunset consult to cap the day before i got to indulge. Election night and chili just seems to work. 20201103_193712.jpg
