Whenever I have friends, who have traveled in the US and have had those crappy breakfast pancakes, you get for breakfast in Denny's or such places, I ask them over and do some sourdough flapjacks, fried in a cast iron skillet.
That is a hit, every time!
I’ll have to mention this to my dad. At least a few times a year he makes sourdough bread from scratch, and a bit more rarely he’ll do pancakes from scratch.

I just use mix. I usually add some other kind of grain to it also. I particularly like rough cut cornmeal. Maybe 10%. I don't make pancakes often though. It's kinda like candy for breakfast.
