I'll quit when they carry me out of the woods.
I'd be bored silly within a week if I retired.
Also, my dad disappeared into a bottle when he quit working, since I have inherited his alcoholism, I'm leery of that.
So the trees can't breathe easy, just yet.

Also, Thais gets a bad case of cottage fever, just from weekends.
So I'll at least hold out till he is no more.

When I look up lox "recipes" I really get confused. This batch is cold smoked after all the brineing etc.

That looks fancier than mine. Mine is just cabbage, sausage, vinegar, loooots of Tabasco, looots of black pepper, vinegar, and salt. Not much to it, but I like it.
