We had the last bowls of the traditional turkey carcass soup I always make after Thanksgiving. It was superb...and my M made a cast iron skillet of cornbread for the side...it was pretty yummy.
Tried something new tonight. Kung pao cauliflower. Vegetarian with a bit of black bean sauce tofu on the side. Those Thai chilies are certainly hot... could only eat a few of them.
Not dinner, but I've been spending the afternoon making marmalade.
My veggie and fruit pusher had some Sevilla oranges.
I've wanted to try those for a while, but you never come across them here.
So I bought 4 pds and set to work.
It has to boil for 3-4 hours before it reaches the setting point.
Now I've got enough for the winter and to give folks for the holidays.
made up some biscuits & gravy last night for a snack...then had the rest for breakfast this morning...no more than put that away and Sister brings over...you guessed it...biscuits & gravy! So had that for lunch...feeling heavy & happy...
Fried spam and cheese sandwiches again. I wanted to get rid of the open spam in the fridge, and wasn't really in the mood for anything in particular, so it worked.
I'm getting started on cooking in a few minutes...chicken breasts smoked on the covered charcoal grill, "red rice" (rice steamed with home canned tomatoes and a healthy splash of olive oil), salad of sweet red bell pepper and spinach.
Had a can of chicken dumpling soup, and some squeaky cheese curds! Got a different brand from wegmans this morning, and those curds squeaked. Tomato basil flavored. Probably should have gotten the buffalo spiced curds.
