Cut into quarters and cooked for 4 hours or so. Picked all the meat off. Put all the meat and some of the reduced stock into a bread pan. If it sets up properly we will eat our head cheese tomorrow.

MasterBlaster Administrator Emeritus Joined Mar 6, 2005 Messages 97,564 Location Louisiana! Nov 19, 2018 #6,268 I'm no expert, but it looks like enough meat to be salvaged to me. Pretty sure the brain is still in there... I guess you crack it open, Jim?

Tastes like pork roast.

FireFighterZero Captain Zero! Joined Dec 8, 2013 Messages 25,488 Location North Central Montana, bloody cold! Nov 19, 2018 #6,273 No, I dont eat the eyes or the brains. Pork brains are supposed to be a real delicacy...but I am leery. Prions and all that. Not sure what you would do with the eyes. My brethren to the north of Justin eat seal eyeballs raw. Head cheese is just a pork meat jell-o mold.
