My wife made a great Lasagna out of the eggplant and tomatoes that I grew. Very tasty dish...the lasagna too.

It doesn't have to be on your living location, perhaps a little spot somewhere for the cheap, with water. That is what zillions of folks do here, have a garden on someone else's property that gets leased out. For a single guy, not much space is required. What about at Doc's place if he is close by? Get up early to water and other chores.

I made beef stroganoff last night. Nachos for snacks.
Grilled chicken breast and hamburgers the night before with fresh corn on the cob. We took two meals worth of corn out of the garden for the trip.
Sure was nice to have some along
