Spring food.
I was going to make a curry, but came across a bunch of absolutely perfect white Asparagus from Holland.
So I made Asparagus Risotto instead.
Since I happened to have a chunk of Grand Cru Gruyere in the fridge, it turned out really well.
I made creamy spinach and mushroom pasta, a recipe from my new Spanish youtube guru.
He uses smoked paprika a lot, so last time I ordered olive oil from my Spanish source, i got some of that, too.
Sure adds a nice touch.

We had Raclette for dinner yesterday.
This morning I made hash browns out of the remaining potatioes and we had a chunk of Gruyere cheese with it.
So, basically, potatoes and cheese for dinner and then...
May I reccommend this guy.

I fried some Gnocchi and green asparagus with a bit of garlic in olive oil, added some lemon juice, salt and pepper just before serving and sprinkled grated Parmesan cheese over it.
Not half bad.
