I made my favourite tomato soup tonite.
I'll share the recipe if any of you have a surplus of tomatoes ( Willie))
Grease a deep baking pan ( Olive oil, NOT lard
)
Fill it with thick slices of fresh peppers ( I use Anaheim, if I wasn't cooking for the mail order bride, I'd add some jalapenos), tomatoes in chunks, quartered onions and whole garlic cloves.
Put some olive oil on the onions and garlic, so they don't get burned and sprinkle salt and pepper over the whole mess.
Bake at high heat for at least 1½ hours, long enough to glaze the onions.
Put it in a blender/food processor and puree the whole lot.
Ad water until the consistency suit your taste.
Reheat and eat.
We ( being ½ Swiss) put slices of goat cheese in it, warm goat cheese ROCKS!
