It's a big plate but it does look out of proportion in the picture. Got a quarter of a beef from a butcher just up the road that raises bison and elk. Best beef I have ever had! Even better than the beef I get from the ranch I use to work for occasionally, and that's saying something!
First decent looking weather day in ages around here. So I'm gonna smoke a pork butt!
First I put a light slather of mustard to help hold the rub and then a copious amount of rub. I use the 'smokin hoggz ' rub out of their smoking recipe book. This will take me 6hrs or so to cook and then another hour or two of messing/finishing. I'll try and update as I go!
Now I know this would be an appy for Butch. But we will have to feed a family of three with it. Gotta make due.
