I've been trying to keep track of potential gluten intake and possible side effects. I've been dealing with bad migraines since just before Christmas. I've found that if I can avoid anything gluten for about 24 hours, I don't have a migraine that night. Not sure why they only happen at night. I definitely have some stomach issues, but not as tuned in to what is the trigger. Although frozen pizzas are almost guaranteed to trigger something. It is encouraging that by modifying my diet, I can see improvement in a short time.
I'm noticing an improvement in BP, as well, which has not been responding to anything I've tried for the last year. I'm expecting to see improved blood sugar, but I won't know until I can get more strips for my meter.
I'm still trying different things to cook. I think I have everything for quinoa salad, which I've enjoyed in the past.
