Goin' Gluten Free

I've leaned towards WFPB a lot over the years. The recent connection between hemochromatosis and gluten issues is pushing me closer to being more strict about it. I can't have red meat, and I don't eat fish or fowl, so I have to do this right to get the nutrients I need. I know there is no problem getting what I need, it just means I have to plan and cook for myself. I cant just grab a slice of pizza or an Italian grinder.
 
I was 8 years old when I started having issues. Wasn’t until I was 30 that I was finally diagnosed with Celiac Disease.
6’0” and only 124 lbs once diagnosed.
I have been gluten free since and 38 years later I’ve had a lot thrown at me. I mainly ignore it unless I sense someone is genuinely curiously interested in knowing why I eat so strictly gluten-free. Then education can happen.
 
I had an appointment with an immunoligist this week. We talked about celiac/gluten intolerance. He said he'd add a blood test that would indicate celiac. It came back negative. This doesn't rule out the intolerance/sensitivity option, which can be just serious as celiac, from what I've read. I'm sort of Journaling what I'm eating, and how I feel. I'm seeing some correlation to what I eat, and how I feel. Unfortunately, gluten issues are not just GI related, so it can be hard to really pin point cause and effect.
 
All test results land in my patient portal, at any time of day. I got some more related to celiac this morning. I don't know what they mean, but sometimes there is a note added by the lab. I tested positive for one thing, but negative for others. The notes don't really seem to help much. "X% of people with celiac carry this, but not all do. In fact, you have a better chance of an accurate diagnosis by throwing chicken bones at a stray cat and seeing which one he eats first, and then guessing wtf that means. At least, that's how we do it in our lab." :lol: I'm sure the Doctor will have a better idea, but it can get a bit confusing.
 
So that is the ‘genetic testing’ for potential gene markers… the doc already ordered the Celiac Panel? Any positives there?
 
Would anyone like some of Miriam's GF recipes? Any requests? She has lots of experience.
Personally, I'm interested, but I'm also eliminating more than gluten, so it gets even more restricteve. Right now, I find something on YouTube that looks like it's close, and I have the ingredients, then I try it. My cooking skills are improving, so that's helping. :lol:

There's like 30 something igg tests. Not sure they are all specific to celiac, or just the other antibodies that he's testing for. The celiac testing was a while you are here thing they I brought up. I can search the results if you know of anything specific.
 
I've been getting migraines again starting around Christmas Eve. I'm wondering if they are linked to gluten issues.

Has anyone with gluten issues had a problem with old fashioned oats (Quaker, in this instance) that are not certified GF? Apparently there is a small concern if they are not certified GF for cross contamination.
Surprisingly buckwheat flour is not certified for the same reason.
 
Carbon monoxide? Not saying it isn't gluten, but analyze everything that's changed since christmas.
 
Certain foods like watermelon can trigger it. Sometimes I think lots of potassium gives me a headache. I can't remember what's in watermelon that causes it.
 
No changes with the heating system in two years. Headache is the worst when I am in bed.
Is it the same laying anywhere?

How long for the intensity to change after getting in bed?


Is your head pushed forward by pillows?

Tight neck and back muscles?

How's hydration? Harder in a cold house, sometimes.


Anything straining your eyes while in bed?
