Knäckebröd?

Pinging Scandinavians or anyone else that might know(it would be nice if @stig turned up). Is there any knäckebröd that stands out to you? I'm familiar with Leksands, FinnCrisp, and I think Sigdal rebranded through aldi. When it turns up in stock I'm gonna order some julknäcke from this outfit, assuming I don't find a reason not to use them before then...


Anything else on the site particularly worth paying attention to?
 
This is the one we usually have in the house.

Occasionally I buy some different but usually have seeds on them and on special offer.

As you can probably tell from the above. I am and English Heathen and not a ‘Homoscandiwegian’

Heh... I'm not super crazy about Wasa. I like some of their alternate products, but the main heavy bread is better done by others I think. I like Wasa's thin crisps. Those come from Norway, at least some of the time. Maybe Kavli? Not sure who owns what over there. For heavy bread, I like Leksands best so far.

Most of this stuff is a 'buy when I see it' kind of thing. The only brand that can be reliably found here is Wasa. The rest I get at distressed merchandise stores, or amazon. Not sure where it's coming from in the distressed channels. It's packed for the US, but I never see it around here. Maybe the midwest sells a bunch. They have a heavy Scandinavian presence.

I got a $200 box of crackers a month or so ago. It was actually $70, and the rest went to shipping D^: I didn't get everything I wanted, some were sold out(quick!), but I'll do a short review of the stuff as I get to it.

Not sure what makes this julknäcke. Maybe it's because it's white colored, and waaaay back in the day, white flour was for special occasions. Tastes like matzo on steroids. I like matzo, so it's fine, but it doesn't have much to recommend it over matzo which can be gotten cheap locally. Also has chemically ingredients. Nothing inherently wrong with that, but it's unsexy.

Ingredients:

WHEAT FLOUR
, water, WHOLEMEAL FLOUR OF RYE*, yeast, vegetable oil (rapeseed), salt, sugar, vegetable oil (coconut), fully cured vegetable oil (rapeseed), emulsifier: E471, acidity regulator: E330, natural aroma, dye: E160a.

* KRAV-organic ingredient

These are fanfuckingtastic...

Not a traditional knäckebröd. They're like a cinnamon graham with more sophistication. It's a stout cracker, and ideal for dessert type things. I've been eating them with flavored *butters on top. Praline pecan, pumpkin spice peanutbutter, maple almondbutter... I wish I got more of these.

Once again Leksands knocks it out of the park. From what I've had, they're the premier knäckebröd bakers...

Very lightly flavored. If you put too much on them, it'll destroy the flavor. I had them with a young manchego cheese. Mild alpine cheeses would be good also, or maybe a creamcheese.

These are pretty meh. They're fine, but there's nothing to particularly recommend them. Neat finding them locally though. FinnCrisp makes some of my favorite crackers. They're light, thin, and crisp. These are made in Sweden For FinnCrisp, and they're none of those things. Just meh.

That's it for now. I've had other Leksands varieties, but there isn't much point in going over the fine details. They're variations on a theme, and all are great. So far, they're my favorite maker for traditional knäckebröd. I'll add more as I get to them. I don't want a bunch of open packages laying around.

BTW, this is the good FinnCrisp...

I've had original, caraway, and multigrain, as well as the same thing, but in little triangles. Dunno if they still make triangles. All are great. All you taste is grain. They're plain, but they go with just about anything.

I have a few boxes of Alaskan smoked salmon. Haven't had any in awhile actually. I like it in pasta salad, but I haven't made that in awhile. Once work gets back in the groove after jul, I'll make a batch to take to work.

In my experience Scandiwegians with buy anything leading up to Christmas with Jul in the title.

Some goods have a little extra ingredient to make it more Jul like. Many are the same product with a new label with the words Jul on them.

Many years ago a local nefarious type even offered me some Julehash. Apparently it was special version of regular hash and was more expensive.

I declined.

All the above. It's piny, treeish, and sweet. The sweetness dominates, but it has a very herbal backbone. I'm not quite sure what to do with it. Ideal use is probably as an edible decoration. Maybe put the cones on some icecream, or a mixed drink. The cedar nuts are easier to deal with cause they aren't as bulky. It's pretty expensive, but once I found it was a thing, I had to try it. I read about in a random article online, and found it on amazon. They put a card in the box showing the real store. I've been poking around seeing what all's available...


They ship out of Bronx NY. >$200 & <50# is free shipping.

I have another bigger jar coming that's just pinecones. From the same outfit I'm sure, but it's also from amazon.

Got some more pinecones. This jar is sans nuts. Must be a girl. Looks like they've won awards from 2018-2024 except for 2023. Wonder what happened that year? I'll wait to open it til the other jar's gone.
