I was told it was age a week. The meat is an amazing shade of redish purple with yellow fat. Grass fed no hormones. Tasty! The ground beef is probably the best I've ever had.

We did end up buying half a steer from the Amish all butchered and wrapped.
I've done rabbits, squirels, pheasant, duck, and gutted deer. So some experience. But nothing as big as a cow.

My wife is talking about buying a whole cow and chopping it up. So what's involved? I know you can order a cow already processed and packaged but she would like to cut the middle man out and package it ourselves.
