I will add this small piece of advice. Where you have the straps hooked to each otherr, add a few wraps of electrical tape to hold them together if you get any slack during the felling process.

Cheese! I went to a hard cider and cheese pairing with my wife last week. I can't stand goat cheese...but the curds were good and a raw milk cheese they had was the best stuff ever! I bought a huge chunk.
One side plate has the square tube welded to it. The other has a round tube with OD the same size as the ID of the square tubing. Capture and pivot all in one.
