I finally managed to get the mail order bride to teach me how to make Älplermakronen.

This will keep someone logging for a looong time....heavy stuff.
I'm slowly getting proficient in Swiss cooking, this was one that I still needed to learn.
The Swiss eat it with apple sauce, that doesn't work for me, I add a salad.
But since it is originally a winter dish, there was no salad to be had, hence the revolting apple sauce.
M makes our applesauce from scratch. It is chunky, full of spices, and brown sugar. It's not anything close to boring, nor like baby food. We can a couple of canner's full every fall...maybe 14 quarts or so.
Even simply a dash of cinnamon completely changes the dish, but nothing compares to homemade. Also while we're on the subject, the apple salad stuff is amazing too, and of course the carmel with nuts on a stick. That's last meal worthy.
