Another canner load under way this morning. Yum. Best crop from our trees in several years.

We put up a canner batch of chunky applesauce yesterday. A bit of sugar and some cinnamon for extra goodness :).

Our apples did well too. Been having an apple pie at least once a week for three weeks now :).

Yup. 2 very densely packed cups of fresh basil leaves 1/2 cup nuts (pine or almond) 1/2 cup grated fresh parmesan cheese 2-4 chopped garlic cloves (we use the heavier amount) 1/4 tsp ground black pepper 1/2 cup olive oil Process in a Cuisinart or equivalent until mostly smooth, but some chunks...

We hit the blackberry patch again this afternoon. Last legs of the season, I think. Unless we get a spell of warm dry September, which is never a good bet, but does happen. Mold moving in on the ripe ones after last week's rain, and the unripe just are not too likely to have time to ripen...

We've had to lay off the blackberries for a bit...a few days of rain wetted them and cloudy cool weather is keeping them from drying out just yet. But the next 3 days forecast indicates dry, so should rectify that and we'll be picking and freezing again.

I should arrange a setup like that. We got the house too warm, canning inside when it was 99 degrees outside:). I like your picnic table, with the folding seats. Nice.

Finished the lot of tomatoes. 35 pints in the pantry, plus a double handful of fresh in the fridge to slice and eat now. Great to have them, great to be done with canning them too!

Today first thing we picked another couple of gallons of blackberries. This afternoon we canned 21 pints of tomatoes, from a local farm. We bought 40 pounds...this is about half of them. Tomorrow we'll get the rest taken care of. Did you know that hands pricked multiple times by blackberry...

On another note...great year for blackberries here. Which is a blessing, as our blueberry crop was disappointing. We've only scratched the surface of the local output, have 4 gallons to freeze after picking an hour yesterday and 45 minutes this morning. Have to do it early, as we're in a hot...

150 plants!!! We have 8 this year. Last year was 16, and the freezer is still bulging with 2022 crop, as the 2021 crop came from 24 plants :).

That is a whole lot of pesto. How many plants do you put in your poly house, Stig?

We started our basil harvest/pesto production yesterday. I don't know how many pounds of raw basil we picked, but processed with olive oil, almonds, and parmesan cheese the total weight was 6 pounds. We package it in 6 oz. amounts and vacuum seal those for individual meals. That'll give us...

They are pretty hard to beat. Fresh razors, sautéed in canola with a strip of bacon, is absolute heaven in one's mouth.
